Our story

We named our company Faggiola, just as the highest mountain of the Apennine between Tuscany and Emilia-Romagna. Mount Faggiola sorge is located within the municipality of Palazzuolo sul Senio (Florence) and it is just where we produce the finest traditional Tuscan cheeses.
Our story begins in 1961, when the farmers of Upper Mugello and of the Apennine between Tuscany and Emilia-Romagna decided to join in a cooperative farm. Thanks to the great social cohesion and to the strong bond that has always united the local people it was possible create a typical and genuine production, result of the authenticity and freshness that belong to this land.

As always, in Faggiola we commit ourselves to offer a choice of healthy and natural products, reflecting the good and authentic simplicity of our territory: that is why we keep on following the traditional country techniques of 50 years ago, so far away from industrial production, treating each product with care and respect, and using only the milk collected in our breeding.
A simple and handcrafted production, according to the old-fashioned way, but with all the security of continuous innovation to ensure only the best quality of fresh or mature cheeses. A quality made even more transparent by constant controls, starting from the milk processing until the sale of the finished product, through a plan of self-control with HACCP method (Hazard Analysis and Critical Control Point).
